Like most families, we eat a faire amount of chicken. But it is a challenge to find a new way to prepare it. Even though we are currently on a clean eating plan, this is one of our favorite recipes for chicken.
INGREDIENTS:

2 tbsp dijon mustard

1/2 tsp thyme leaves\

1/2 tsp kosher salt

1/4 tsp cayenne pepper

4 boneless, skinless chicken breast halves (8 oz each)

3/4 cup panko breadcrumbs (or substitute crushed croutons)

3/4 cup grated parmesan cheese

Cooking spray
DIRECTIONS:

Preheat oven to 450 degrees

Mix the mustard, thyme, salt, and cayenne in a medium bowl

Add chicken breasts and turn to coat completely… set aside

In a medium bowl, combine Parmesan cheese and breadcrumbs or croutons

Dredge the chicken pieces in the mixture, coat evenly

Press the coating into the chicken

Put the chicken on a rack and set baking sheet below or in a roasting rack after spraying with a quick burst of cooking spray

Bake until the chicken is golden brown and cooked thoroughly (15-20 minutes)

Let rest 5 minutes before serving
