Like most families, we eat a faire amount of chicken.  But it is a challenge to find a new way to prepare it.  Even though we are currently on a clean eating plan, this is one of our favorite recipes for chicken.

INGREDIENTS:

  • 2 tbsp dijon mustard
  • 1/2 tsp thyme leaves\
  • 1/2 tsp kosher salt
  • 1/4 tsp cayenne pepper
  • 4 boneless, skinless chicken breast halves (8 oz each)
  • 3/4 cup panko breadcrumbs (or substitute crushed croutons)
  • 3/4 cup grated parmesan cheese
  • Cooking spray

DIRECTIONS:

  • Preheat oven to 450 degrees
  • Mix the mustard, thyme, salt, and cayenne in a medium bowl
  • Add chicken breasts and turn to coat completely… set aside
  • In a medium bowl, combine Parmesan cheese and breadcrumbs or croutons
  • Dredge the chicken pieces in the mixture, coat evenly
  • Press the coating into the chicken
  • Put the chicken on a rack and set baking sheet below or in a roasting rack after spraying with a quick burst of cooking spray
  • Bake until the chicken is golden brown and cooked thoroughly (15-20 minutes)
  • Let rest 5 minutes before serving
