We are continually looking for creative ways to compliment our meals with sweet potatoes. This is a simple but delicious recipe that we always enjoy!
Ingredients

4 sweet potatoes peeled

1/2 cup freshly squeezed orange juice

2 tablespoons of vegetable oil

1 teaspoon ground ginger

1/2 teaspoon cayenne pepper (omit or adjust to taste)

Kosher salt & pepper to taste
Instructions

Preheat oven to 450 degrees

Cut the sweet potato fries into 1/2 inch squared strips (fry shape) and place in large bowl

In small saucepan, combine orange juice, vegetable oil, ground ginger, cayenne, kosher salt, and pepper

Simmer 2-3 minutes, whisking until reduced to a thick consistency.

Remove from heat, pour over the sweet potatoes and toss to coat

Rub 2 teaspoons of vegetable oil on a rimmed non-stick baking sheet

Arrange sweet potatoes on baking sheet and bake until brown

About 25 minutes, turning after about 10-12 minutes.

Remove from baking sheet and enjoy
