We are continually looking for creative ways to compliment our meals with sweet potatoes.  This is a simple but delicious recipe that we always enjoy!

Ingredients

  • 4 sweet potatoes peeled
  • 1/2 cup freshly squeezed orange juice
  • 2 tablespoons of vegetable oil
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cayenne pepper (omit or adjust to taste)
  • Kosher salt & pepper to taste

Instructions

  • Preheat oven to 450 degrees
  • Cut the sweet potato fries into 1/2 inch squared strips (fry shape) and place in large bowl
  • In small saucepan, combine orange juice, vegetable oil, ground ginger, cayenne, kosher salt, and pepper
  • Simmer 2-3 minutes, whisking until reduced to a thick consistency.
  • Remove from heat, pour over the sweet potatoes and toss to coat
  • Rub 2 teaspoons of vegetable oil on a rimmed non-stick baking sheet
  • Arrange sweet potatoes on baking sheet and bake until brown
  • About 25 minutes, turning after about 10-12 minutes.
  • Remove from baking sheet and enjoy
